Weber fuel boiling - 1969 V4

I have been experiencing fuel boiling and resultant hard starts from what looks to be the bottom of my Weber 34 ICH being too close to the top of the thermostat housing on my '69 96 V4. Over the weekend, I was at the Carlisle Import Show for the great Saab turnout and looked at Jonathan Dennis' 1971 V4 with the same Weber. He has about double the space between the bottom of the carb (where the fuel feed is) and the top of the thermostat housing. He does not experience the fuel boiling that I do. I know that 1969 is a one year only cooling system, but wonder if the thermostat housings are different and whether a post-'69 housing (which appears to be shorter which will give more space) is interchangeable with mine. Note that the intermediate plate between the carb and the engine is in place on my car. Any suggestions/thoughts are appreciated!
