Emperical (magazine articles?) studies have been done that seem to show about a 10% improvement in power on premium. Your 2.0T 210hp has plenty to spare. I can feel the difference myself in higher speed places like the I-805 hill out of Mission Valley. It would be less important on a 2.0t with only 175hp. No studies have been done about better mileage on premium and there's a valid line of thought that says premium is a waste if a car tolerates regular and Saabs do.
The monkey wrench in that theory is that an engine that can derive 10% more power can be more efficient too, hence greater fuel economy. Many BB posters do report slightly better economy, but only anectdotally, no hard studies, and one recent poster to the 9-5 BB found just the opposite. So who really knows?
I preach better fuel economy on premium and better fuel economy on better gas, so I buy premium cheap gas.
