having had several vehicles with both oil and water temp guages. (My 9-5 has the "centering" of the temp gauge disabled)
Remember the coolant has the benefit of a thermostat, which get's it up to temp fairly quickly. Most oil sumps take quite a while to warm up, especially in colder temps.
It can be quite deceptive when the heater is cranking heat.
