If it runs higher at idle and stop&go, but drops at speed, then the thermostat needs to be replaced.
The sensor can fail too, but typically then does not read at all.
Sometimes the problem is the connector and removing and reseating fixes it.
If the stat is bad and you run with a cold engine, there will be chemical damage and the MPGs will cost you $$$ too. The stat is cheap and many DIY the job. It is a bit fussy to do. Are you also due for a coolant flush?
