Saab's official instructions are to drive a wedge (Saab specific service part, complete with P/N) between the engine and the sub-frame to hold the engine so the upper mount can be removed. I like a jack better.
The oil pan is a pretty substantial aluminum casting. The block of wood acts as a cushion to protect the pan from any concentrated loads caused by the jack saddle, thus preventing any chance of damaging the pan.
I would buy the new pulley with a bolt. The hose clamp holds a power steering hose to the engine mounting yoke with a single screw/bolt.
You will also need to remove the large lower splash shield beneath the engine to provide you with room to guide the new belt on its path around all the pulleys. Five screws secure this shield, 4 under the car and one in the passenger-side wheel well. There is no need to remove the passenger-side wheel to loosen this screw.
All of this is much easier if the car is on ramps. I have a set of Rhino Ramps (the 12,000# capacity truck versions), only $25 on sale.
