Sludge doesn't happen randomly. It is caused by oil breakdown, which occurs when the oil is left in the engine too long.
The best way is to examine the sump and oil screen. Another way is to check oil pressure. Note that for the oil pressure test to be accurate, it must be performed with a specified oil and at a specified temperature. A quick check is to remove the oil drain plug and scrape around with a wire. Usually there is a heap of carbon granules piled up below the oil pickup screen on sludged engines.
Most "sludged" engines can be saved without installing a whole new assembly, this according to Chuck Andrews. But saving the engine may involve a thorough cleaning, new bearings, oil pump, and cam chain components. Then there's the problem of incorrectly manufactured oil pumps.
Personally, I would avoid used 9-5s and OG 9-3s unless I absolutely knew "where they've been."
