.....was the cause on my 9-5. It acted up as you describe...very suddenly the gauge would drop to the bottom...then in a moment or two it resume with a normal reading.
The temperature sensor is located at the end of the head on the driver' side and is very easy to replace (5 min.). Note that if the temperature sensor goes bad gs mileage and performance will drop...and emissions will go up. The sensor is an input to the engine management computer.
