V6 thermostat replaced, leak again, HELP !

10 days ago, I bought a nice 2000 9-5 SE with 149,000km on it. Always serviced at dealer. I noticed a slight coolant smell when I test drove it but no visible leak. Lost maybe 4 ounces in 500 km. Nowhere to be found.
Yesterday, my temp gauge went to 7 o'clock for a few seconds then back to 9 o'clock position. I checked on this board and then cleaned the sensor contacts. Gauge was fine after.
Late yesterday, I noticed I lost some coolant, so I removed the engine cover and found fresh coolant next to the t-stat. It has been replaced last december at dealer( at 145,400km) at a cost of $766 CDN ( $323. labor plus t-stat and all the intake gaskets, etc). Water pump was done a month before, at great expense. Dealer repair waranty is for 3 months or 8,000km, so no luck here. I'm past the 3 months window, but not the mileage. It's ridiculous.
Question: Would all those intake gaskets have to be changed again? My wild guess is that the t-stat O-ring is bad. But the intake gaskets??? They are 4,000km ( 2,400 miles) old !
Last, some people claim they can change the t-stat on the V6 without removing the whole intake assembly. True or false?
Help !
