First of all, how did you determine it is the thermostat gasket or o-ring that is leaking instead of the engine oil cooler cover?
Maybe they only did the thermostat and not reasealing the engine oil cooler cover at the same time.
I have been reading this board for awhile and I have not seen anyone claiming that they can replace the thermostat without removing the intake manifolds EXCEPT, if you have removed the timing belt and camshaft sprockets together with the rear timing cover, then you can replace the thermostat from that area without removing the intake manifolds.
It is 3 + 2 intake gaskets/o-rings that you most likely can reuse if you want to save money if they look ok when you have taken it apart.
