The only major issue with the 9-5s 3.0 liter, asymmetrically turbocharged V6 is that the timing belt MUST be changed every 60,000 miles. Fail to do that, and you run the risk of the belt snapping, and that results in valves hitting pistons, and you're in for a $6,000 engine rebuild to replace both heads.
As you'll find in multiple posts here, though, the belt should not be the only thing to be changed. The timing belt tensioner, and the idler pulleys should also be changed (there are numerous tales of V6 owners who had Saab replace the belt under warranty, but the belt later broke because they didn't change the other bits). Also, it could be argued to replace the water pump at the same time.
If you can keep up with the maintenance, the V6 is a great car to drive. the engine is very smooth and quiet, but if you want to play, it'll give you a lot of torque and horsepower, too. I think the best V6 cars to look for are 2002-2003 Arcs. The 2002 cars got the facelift, and a host of other under-the-hood changes. Plus, with an Arc of those years, you get the same brakes the Aero gets, including the ventilated rear brakes.
And if you press the "S" button on the gearshift, make sure you've got plenty of space to run. You'll need it!
