I'm 6'5" and new to my 9-5. Have not driven a 9-3.
The 9-5 fits me as well as, or better than, any car I've been in (Acura RL, MDX, Lexus LS, GS, etc.)
I found that the leg room in the 9-5 is as good as any car for me. The spec's don't tell the story, you've got to try the car on for size.
A surprising benefit of the window/door controls in the center console on the Saab is that it gives me more knee room against the driver's door since I don't have that window/door control panel jutting out of the door panel into my left knee. Who would have thought?
I have very little head clearance, but I've learned that the 9-5 suspension doesn't bang my head against the roof like it did in the Acura RL.
I drove a Subaru Outback the past 5 years. The raised roof gave me great headroom. I paid a man to modify the seat tracks so that I got more seat travel, and this got me great leg room (though it was a long reach to the steering wheel!). The seat bolsters however came to aggravate the pain in may legs on longer drives, and this was one of the reasons I began shopping for another car. I hope the Saab (9-5 Arc SW) doesn't create this problem for me. Early signs are positive (I've only got 800 miles on so far). I didn't look at the Aero because I didn't want the bigger seat bolsters in it.
