We never know exactly when a thermostat fail but it wouldn't surprise me if it fails right after a mechanic has touched your car, that's just Murphy's Law in action. Just a batch of new coolant might change cooling effect and a lazy thermostat might start to complain.
Luckily, most thermostats fail in that they open to early making the engine run too cold. At some point it triggers a fault code for that.
Since it is so labor intensive to change the thermostat on a V6, I don't do that on a regular basis but I also try to pair it up with replacing of the timing belt because it is actually easier to get to it from the timing belt area when the belt is removed.
This is of course if the oil cooler cover doesn't need to be resealed due to a coolant leak. In that case, the intake manifold has to be removed anyway.
