V6 engines are a little bit troublesome as far as coolant flow goes and may have a tendency to not circulate properly and push coolant out when removing the cap.
A coolant thermostat could be the cause for that or partially plugged radiator.
What you need to do is to find a way to monitor the engine coolant temperature and see if it really is a temperature issue or circulation issue.
If the temperature is not hot enough to satisfy the cooling fan to come on, it will not come on.
207°F is the level when low speed fan should come on for the V6.
If you get one of these OBD2 reader scantools you could see for yourself what temperature your engine is running.
