As far as I recall, isn't the specification of oil broken down into several sections?
10W30- 10=low temperature viscosity
W= multi grade
30= high temperature viscosity
The "multi grade" capability (W) should allow the oil to react differently depending on the temperature. In this case, at low temperatures, the oil should behave like SAE 10, at higher temperatures, it should behave like SAE 30.
Based on this information, I'd be led to believe that in hot weather, both 5W30 and 10W30 would perform similarly.
To maintain the wider viscosity range of 5W30 vs 10W30, the manufacturers must include more additives in the 5W30 in return for better low temperature performance. This would be even more so the case with something like 0W50.
I use 5W30 all year in Canada. If one was to drive their vehicle hard in cold conditions (ie, very cold at startup and then pushing the engine hard once it warms up) then I would think something like 0W50 or 5W50 would be in order. In warmer climates, where the lower viscosity range wouldn't be necessary, I'd use 10W30
