Any decent synthetic xW-30 will give you all the protection you need.
Sure, if you really, truly believe that thicker is better, then use an xW-40 or xW-50. In theory, anyhow, the higher viscosity oil will run hotter, create more internal friction, and give you a bit less performance/mileage.
I use AMSOIL 0W-30 in three turbos in the DC area. It gets hot, it gets cold (although not like WI and MN), and it gets changed yearly or 10K in the turbos.
