The engine ECU 'software' is changed to get more boost and to deliver more fuel for the extended boost pressures. Emissions are not changed and MPGs when driving sanely are not effected. Power increases can be very significant. The higher levels of power require changes to the intake and exhaust restrictions.
It used to be with the older T5 systems, that you shipped off your ecu or got an exchange unit. With the T7s, you get a programmer that you plug into your diagnostic port. It archives your old code and then installs the new. You can restore the original if you want and you can download updated software from the internet and put that in the programmer and load that. I don't know that that would happen enough to matter much.
