The Aero and its engine really need to be driven differently than you're driving your 328i. I had the same problem adjusting from a 6cyl NA to a 4cyl turbo. You'll get used to it, and once you do, I think you'll see a noticeable (positive) difference in power. Though I'll say power will never be as immediately/universally available as it is in your 328i.
To answer your questions...
1) I really like the Saab Exchange. They have by far the nicest Saab facility I have ever been in. Their sales staff is pretty much typical but their service dept. is awesome. I live downtown and when I want service from a dealership, I will make the long drive up there.
3) The chance of a rim denting dramatically increases with the diameter of the wheels you're using. 17" diameter and larger wheels need to be driven carefully when faces with curbs and potholes.
8) As for indies, the only indie I've been to with some regularity is Saabtech, which is on the near North side at Webster & Clybourn. I wasn't incredibly happy with their service and many Saab owners I know in town swear by Petersen Automotive in Skokie.
