Painting an SPG: Questions, experiences, suggestions needed!

Hello...
I have an 88 SPG (Ed. grey) which needs paint on the hood and roof. The clear coat is peeling, but the body is otherwise super straight. Question: I found a good deal on having the whole car painted, and I am wondering what kind of prep work I should do before handing her off to be painted. Do I need to remove all of the SPG panels? Do I need to be extra careful with my rims and exhaust tail pipe?
Has anyone had any experience having their SPG painted? Does anyone have any suggestions for what I should do?
One note: I was considering having the SPG panels painted to match the car (more like a European Aero that way), along with the rear vent covers (also an aero look) Should I, shouldn't I? Help me out!
