A couple months ago I sold my Pontiac T**** Am w/ the 305 Chevy small block, which you may be familiar with. I also drive my brother's car frequently since we live together, which is a 300+ hp T**** Am. I like both of these types of cars, but for different reasons. With a Firebird, you have tons of in-your-face torque horsepower, but the seat position basically has you laying on your back. You cant see the road immediately in front of you like in a Saab. Also, if you want to upgrade a Firebird, parts are very cheap and readily available from rural-route type catalogs like Jegs, Summitracing, etc. One reason I like driving the Saab is that is looks good without looking kinda gaudy, like a Pontiac, and it seems to have good build quality. The sound of the turbo spinning up is great too, especially with the windows down and a standard shift. I would say just get a late 80s 900 like you were saying and then remove what weight you can, and maybe modify it up to the 210hp range. Ive read that for every 100 pounds you take out of a car, you gain 10hp. You can do things like getting lighter A-arms, aluminum rims (it probably comes with them anyway), remove the rear seats, tire and jack, AC and its various parts, etc. Also, I like the Saab because it is socially acceptable AND fun to drive, which most sports cars are not (T**** Am = redneck, Ecslipe, DSM, etc = teenage twit, misc muscle car = midlife-crisis-mobile, etc) Anyway, good luck!
