I would try and avoid the animal, but stay on the road. At that point, it's a case of your life or the animal. Off road, and you can hit a tree or flip.. Yes, Saabs are safe, but that doesn't mean you'll walk away from every accident. The same with the deer - yes, Saab does a Moose test, but you can still be killed or injured hitting a deer - all it takes is for a hoof to come through the windshield.
So - avoid hitting the deer but stay on the road. Brake like mad but don't lock up (the joy of ABS), and keep your steering inputs small, like you were driving on ice. You can still change the trajectory of the car, possibly enough to either miss the animal or just graze it - that's not for the animal's sake - that's for yours.
If I see a squirrel running across the road in front of me, I will slow down and even stop to let it across. But I always look in the rear-view mirror first. If there is a car close behind, I'll risk hitting the squirrel instead of getting rear-ended. I'll swerve to miss a squirrel if it jumps right out, but I keep the swerve to a minimum.
