Having lived in Westchester County NY, lots of deer and trees, I'd put in another vote for staying on the road, but still doing your best to avoid collision with the animal - as sharp as those hooves are, big trees are worse. Of course, even if you are going slow, a deer standing next to the road is a big risk in my experience. I've had them wait until the car was even with them, then run into the road right into the side of the car! If nobody is coming in front or behind, and I'm going slow enough, I honk and them a bunch - sometimes that gets them moving in a direction away from the road and the car, and if they do jump in front, I'm going slowly enough to stop or swerve.
