It's unclear where you're having the problem.
Basically, you remove the plug wire, slip the spark plug socket over the plug, and turn it counterclockwise with a ratchet. I can see two places where you might have a problem:
Wrong socket. The 16V engine has the plug down in a hole between the two heads. The plug itself is narrower than older spark plugs. You need a narrow spark plug socket. But it's not a 'special' socket - many cars use it, and I see them in most socket sets. Any autoparts store that carries spark plugs will carry the wrench. Simply pull one of your new plugs out of the box, hold it up, and tell the autoparts guy you need a socket for it.
Timid. If a spark plug has been in place for a long time, it can take a lot of force to unscrew. First, make sure the socket is seated well on the plug. Next, make sure you're turning counterclockwise (righty-tighty, lefty-loosey). I've seen some experienced mechanics sometimes forget and 'keep tightening' when they meant to loose. If you can't get the leverage, get a bigger ratchet, or slip a piece of pipe over the end of the ratchet to increase you leverage. Put your back into it. Just make sure the socket doesn't slip off.
When I put spark plugs in, I usually spray the threads with some WD-40 - they come out easier the next time. And don't overtighten the plugs going in.
