Ok, I see where we are. Good to see you marked the shims (those are things that, well, just have to be asked about, no offence intended)

For the first "roller", I'm assuming that you mean the ball bearing which you said was very worn and replaced.
For the roller bearings on the differential (and their races on the inner driver carrier), if you don't see pitting or other obvious wear on the races or on the rollers, I'd be inclined to run with them.
