You might want to read today's other posts on overheating. That said, I wonder if you used a SAAB 3-position t-stat. If not, then maybe that's the problem. Aftermarket replacements don't always incorporate the 3-position design like OEM parts. Just a thought.
So, are fans not coming on at all now? I got confused by your post.
Also, sounds like the a/c fan motor may have died. Try jumping it directly to 12V from battery (I think hooking it up backwards accidentally won't kill it--it'll just run backwards, blowing air out towards rad--but I'm not sure). Anyway, either do that test OR put a test light/voltmeter on the a/c fan plug (disconnected from fan) and then bridge the thermoswitch contacts together with them still connected to thermoswich.
Did it only overheat when air cond. was being used?
