What type (brand) of thermostat did you use? Was it a SAAB part or as good as one? (Waxstat and Wahler are good OE-type t-stats).
To see of new t-stat bad: When temp guage nears red, stop car, and (carefully) tap the top cooling hose (t-stat to radiator hose) with your hand, to check temp. If it's hot, then t-stat is open, and look elsewhere for the cause. If hose isn't hot, then the t-stat is malfunctioning and is faulty; replace it.
By the way: Where ARE you that you're doing 80mph? (Just curious.)
