I have a single Magnaflow on my '86 900S. The exhaust system is 2.5" from collector to tailpipe. The car is loud - no two ways about that - but it's growly and not tinny like your average over-exhausted Honda. I wish it was quieter, but it isn't obnoxious. My gearing is set up so that at 3000rpm I'm doing 80mph, and the side effect of that is that at sub-legal speeds there is a bit of droning. It isn't much worse than my '88 9000T with a 3" exhaust, however.
After the installation, I noticed a slight drop in low-RPM power, but not something I would get upset about or even notice. My opinion is that the exhaust manifold on the 900 is long enough that an enlarged collector doesn't make a tangible difference on exhaust scavenging. Upper rpm was slightly improved, but it's hard to tell whether that was due to the bigger exhaust or simply a better-designed muffler.
My guess is that a 2"-2 1/4" system with a single muffler (maybe even a Flowmaster) would be a good setup. Since I already invested in a new 2.5" I/O cat, I'm not going to be messing around with mine for quite some time... :)
