If I read your post right, you've managed to align and attach everything back to normal, but you find resistance when attempting to turn the crank from it's zero degree position. I do know that when turning an 8V cam manually and each cam lobe encounters a spring tensioned valve, there is resistance. Very normal. Add two cams for a 16V and it doubles the resistance. When you say no lubrication, I doubt you mean bone dry. I would think the shop that did the head used a spray of some sort as general protection on the lifters and valve guides. So long as the valves are set in the guides, they can move just fine without the normal saturation of oil everywhere.
