Help Wiring my Audio System (Long)

Hey, I have some q's about wiring my new audio system. Here are the components:
Blaupunkt Newport CD85 20w X 4 Head unit
2 Infinity Reference 4 in. in Dash Slots
2 Eclipse 4x10 Speakers in rear slots
100w X 4 (50w X 4 RMS) Amplifier
8 inch Kenwood Sub in Sealed box
OK, So I got the Amp hookup kit I wont have any trouble hooking up the power sources. My Questions relate to hooking up the Amp to the Head unit.
Is there an Easy way of getting the Head Unit out of the dash without the DIN things?
I think that the Head unit has RCA cables, but I dont understand how they hook up to the Head. My Kit only came with one RCA cable (+ and -) do I need 2?
What is the Remote wire for?
Can I leave the front two speakers on the Head units power, and run two channels from the amp to each rear speaker and then have a X-over and have both of the remaining channels go to the Sub?
I know there are a lot of questions, but It doesn't seem that anyone wants to make this easy for me. They just want me to drop 100 bucks on installing their way.
