These bearings are shells steel shells coated on the inside with a lead alloy (*very* simplified material description). The crankshaft and rod journals ride within the bearings on a thin pressurized layer of oil. There was a really neat explanation of the phenomenon showing the pressure gradients in this type of bearing on the web somewhere. Of course, I've forgotten where it is.

R&R-ing the bearings is pretty straightforward: You replace the shells by taking off the bearing caps, pulling out the old shells, putting in the new shells, and replacing the caps (a very simplified description) Look in Bentley or Haynes for good pictures.

Cleanliness is of utmost importance because you don't want anything to get between the bearing shell and the bore in which it sits and you don't want grit to be embedded in the soft bearing material.

I'm toying with getting a cheapie engine stand from Harbor Freight Tools and fabricating an adaptor plate. But, if it becomes a problem, I'll just use the workbench.

I'm just being anal about wanting to replace the bearings. But I figure that, as long as I'm going through the effort of pulling the engine, it's cheap to replace the bearings right now. Murphy sez that some Bubba in a $30 pickup truck will total my car right after I complete the work.

On those rust bubbles, you may want to pick out the rust, dry the areas as well as you can with a hair dryer, and apply POR-15. Commercial rubberized coatings that I've seen are more water-permeable than you want to believe.
