A 0W- will pump up a bit faster in mild cold, and quite a bit faster in extreme cold. An xW-40 will bit more viscous at operating temperature than will an xW-30.
As a practical matter, you'd been unlikely to determine any great difference in the operation of your car. Mobil 1 is excellent oil and I'd use it if I couldn't (or wouldn't) get AMSOIL. Continue to use what you are using, or go ahead and change to the 0W-40. I wouldn't recommend going to 15W-50--you don't need any additional protection afforded by the thicker fluid.
