Sharp cut off is the fuel pump cut off from overboost. The pressure switch is under the dash and can be adjusted to cut off at a higher level or simply bypasssed by connecting the 2 wires together. You will still have engine protection from the knock sensor.
AMM(air mass meter) problems such as flat spots and surging are much less dramatic. I don't think the AMM is your issue.
