Well, I'd just bleed until I saw new (clear) fluid come out. If the old fluid has been in there for several years, like mine, it will be dirty, dingy dark brown (yuck!). Bleed until clear, clean fluid comes out but keep a watch on the reservoir level!
If I have to quantify it, I'd say buy 3 quarts of brake fluid. That is equal to about 3 liters (a little less than 3L). Also, two pints = 1 quart, so, that's plenty by Bentley methods, giving you six pints (one per wheel, one pint for the clutch, and one pint left over for topping up).
