Depending on your state inspection standards and your tolerance for poor condition, you will most likely dump buckets of money into the car getting it into good condition. Chances are, at that price, even if it has no major mechanical issue like bad motor or transmission, it will need a load of work on the suspension, exhaust, perhaps body work, etc. Or maybe you've found one with good mechanicals and a really bad body and interior? That would be ideal for not spending cash, but the any cash you do spend would be mostly wasted on a bad car.
That said, I bought my '87 900s (my first Saab) with the odometer broken at 177k six years ago for the same $500. I had to replace the steering rack and a good deal of the left front end do to an incident the car had with a curb before I bought it. I think I got lucky, and I worked on it myself, but the car still runs fine and looks decent. I don't drive much anymore, but I will after I restore it, when I get around to it... My fiance asked me if the car was "worth it." I told her "absolutely not, but I'm going to do it anyway!"
