The pulsating brakes...safety thing. Why are they pulsating? Are the pads just worn or is there a larger problem with the ABS. That is the one that worries me.
After that make sure it is just the oil pressure switch that is bad and not a problem with the acutal oil pressure....which would be catastrophic. Did the previous owner change oil regularly? The screens can get gummed up if not and that leads to low oil pressure.
After that, I'd do the oil pump o-ring. If it is leaking it will eventually start to ruin the main pulley. This would be a good time to go ahead and replace the belts instead of just adjusting them. Cheap insurance.
Everything else on the list you can prioritize anyway you like. I'd go like this:
1. Thermostat-good time for a flush and fill
2. Power steering hose- pretty easy. It may just require taking that filter out of the line and just putting a plastic nipple in it's place. That's where mine leaked from.
3. Valve cover and exhaust manifold gasket- I'd leave the exhaust gasket to the mechanic. Breaking a manifold stud is absolutely no fun!
4. Recharge A/C- Last and least important and almost always more than a re-charge. If something wasn't leaking then it wouldn't need re-charged. Hopefully it's just hoses. A/C work can get expensive quickly.
5. Not sure about the shifter adjustment...is it a problem or is the mechanic just being picky? I would not worry about that unless I was having transmission problems.
Enjoy the car...I've got a red one of the same year and love it.
Change your trans fluid when you change the oil. The auto trans are notoriously weak and keeping fresh fluid in is key to longevity. Maybe overkill but trans fluid is cheap.
