Begin by making sure there is no air in the cooling system. That'll cause cooling spikes like you describe. When you refilled coolant after changing sensors, did you open the bleed valve on the thermostat housing? If not, don't read the rest of this post and go do that. To ensure all the air is out, you may also want to run the car until the thermostat opens and the cooling fan cycles with the bleeder open and a hose attached to catch expelled coolant. A clear hose helps because you want to close it up after the car's warm and you see no more evidence of air coming out.
You could have severe obstruction in the heater core, or your water pump is aftermarket and committing suicide, but most likely either your thermostat is on the fritz or the heater valve is dying. Then again, none of these scenarios would describe both symptoms, just one.
The heater valve will most often stick all the way open or all the way closed, or start urinating on your right foot.
Be sure the expansion tank cap is holding pressure, a long shot.
Also, it sounds like it's time to check for leaks out of your radiator.
