The first thing that comes to mind is the Air Mass Meter (AMM). It measures the air into the engine, so the ECU can schedule fuel. When you open the throttle, more air comes in. If the AMM isn't working right, it won't see that air, so the car will start to run lean and want to die out. If you're really gentle, the ECU will compensate and go to some backup systems.
If from a light you give it a lot of throttle - like three quarters throttle - does the car accelerate OK? (Don't be gentle on the pedal here). If so, that would be a sign of a bad AMM, as when you go to near full throttle, the throttle position sensor gets the hint and the ECU pours on the fuel.

If you do need a new AMM, go with a rebuilt unit from one of the site sponsors. MUCH cheaper than the dealer. And note, the AMMs between certain years are NOT interchangeable, even if they look similar. So follow the guidlines in the posting.
The AMM is in line to the throttle body. The other thing to look for is a vacuum leak between the AMM and the throttle body. That would also let un-metered air into the engine when you open the throttle.
The other thought would be a badly clogged fuel or air filter. If the fuel filter hasn't been replaced in a few years, it would be a good idea.
