Can't tell rotor wear/score until rotor is miked. Sometimes you can turn the rotor and get out most of the scoring but with rotors running, what, $35 or so for good Brembos, I just replace them when they're scored or have a big ridge on the outer edge. If you have slotted or drilled, more expensive rotors, it could pay to measure the thickness and estimate what it will be after turning. Some shops like AutoZone even have free rotor turning with brake pad purchase but I'd restrict my pad purchases to a high friction ceramic (but not too high unless you have ABS or on non-ABS cars high friction front pads...the rear end will lockup and come around).

It could be possible a hung up piston got cocked when it went too far out but unlikely. Alternatively you can cheap out by popping out the pistons/seals and carefully cleaning out the cylinder if it appears to have crud and pitting. I'd put new seals and new dust boot on before reinstalling the pistons. If the cylinders are deeply pitted there's not much you can do but replace the caliper. OTOH, there's nothing stopping you from forcing the piston back into the caliper if you can and installing new pads and seeing if they bed in...it all depends on how bad the rotor is scored and if the caliper now leaks.

You can always redo it later and it isn't any less safe than when you were driving it on the metal and scoring the rotor!!!
