not to scare you, (probably will anyways), but i am in the midst of a head gasket job on a 91 900s that i picked up with similar symptoms, but losing more coolant. the old gasket had many of the water passage holes completely filled with calcified crapola, thus effectively impeding flow of water up and down the engine. the 2.1 motor is notorious for having the factory coolant f up the head and block from what i gather. the p.o. had at some point got it hot also. when i picked it up it had suspiciously new green coolant in it. the head needed a .010 shave to get it flat.
my goal, like yours is to have a reliable daily driver that you don't have to worry so much about. i am lucky in that i have other cars to drive while the 91 is under the knife, but the peace of mind in knowing what the hell is going on in the engine bay cannot be overvalued.
i say take a weekend and get dirty. bond with your car. bleed a bit. break some tools getting the head bolts off. drink beer. at the end of it you can watch the guage and know what you are seeing. this will also give you a chance to change belts, alt bushings, toss in a new water pump just for laughs.
