They tend to flare out the end of whatever they are screwed into as you turn them, and that locks it in worse and makes the easy-out strip away more of the precious remaining metal.
A poor man's substitute is, a small file of traditional form with the tapered square tang for driving into a wood handle. If there's room, tap it straight down into the hollow stub of the extractor, and set an adjustable wrench jaws to fit the file, with pressure right there at the bottom where the tang comes out. Then tap the end of the file with a hammer as you cautiously apply pressure.
Snap-On also sells a nifty type of easy-out, a multi-splined skinny but incredibly tough straight un-tapered steel shaft with a sliding nut machined to fit the spline of the shaft. You tap the shaft into the hole, then slide the nut on and loosen with a wrench. They come in various sizes and by the each they aren't too expensive. Buy a replacement bleeder screw at an auto parts counter, flag down a Snap-On van and get the right easy out to fit its hole, then go to work.
Usually if I need to open an older bleeder screw I tap it first, straight in, with a hammer, to loosen up any rust that might be on the threads. Use a 6-point socket to crack it, and use a box end wrench on it as I bleed.
