What would the car have if it didn't have a heater core? Radiated heat off the exhaust manifold like a Beetle or Corvair? The cars aren't that strange!
I think you have air in your cooling system. When the thermostat gets very hot it will restrict flow to the heater core. The other possibility is that the bypass valve has failed and needs to be (replaced or) removed. A few months back someone posted part numbers for the heater hoses you'd need to complete that job. You may want to search for that post.
Get the lower value thermostat; I think it's 82 degrees as opposed to 89. This is especially important for the 1991-1993 non-turbos, unless you plan on changing the thermoswitch while you're at it.
Advice: change the thermoswitch while you're at it. That will kick the engine cooling fan on quicker so the temperature (and gauge reading) will not spike. A few days back someone asked about that and I posted the 1991-1993 overheating cure link. Your homework follows at the link below.
