and that is EXACTLY what the Saab shops do. Back with the c900 was the happening model walking into San Diego Saab (rip!) you would see 20 or so cars in the shop and most had the hood on top, away from the work and the movement of people, parts, and tools.
If you have two people you can take it off, or put in on again, in about two minutes, even sharing the same 12 mm six point combination wrench. just remember to undo the windshield washer water supply line! I prefer to remove the hood when doing anything that is on the rear (which is towards the front of the car...) of the engine. It's just less work. Also if you are doing a clutch job and have a collapsed slave cylinder the Saab tool to push the PP fingers back needs the room too. Moving from side to side around the open hood becomes bothersome, and also exposes the hood and paint to dings and nicks from anything you may be carrying too.
Just my opinion of course.
