I too like the used Saab pricing of current.
If you want to wheel and deal Saabs, proponents of collectability could make a few bucks on car transactions.
As far as value versus restorability, let me let everyone in on a little secret. Even expensive collectible cars cost more to restore than they are often worth. You don't hear this much, because the people spending the big cash to restore them have it done so they can enjoy the car for generations, rather than for flipping cars like real estate. They also don't like to advertise they just spent more than the car is worth. This is why collector car insurance companies will insure a car for a stated value. People who restore cars for reselling usually have a good time, but undervalue their labor and talent.
I like to enjoy my car. If it gets destroyed for some reason, I can get another one pretty affordably. You're seeing C900s in pristine shape go for more than older OG9-3 or 9-5. 91se convertibles and other special Saabs lead the pack. The nice ones are just high enough priced so as to not get bought for high school kids winter beaters. I don't intend to sell my Saab or make anything back on any "investment" so I like prices as they are.
