motor mount question

Is it possible to determine the condition of a motor mount (hydraulic) when the engine is out of the car? There is a lot of grease and grime on it but I don't see that the rubber on top is torn. Is that the only damage that can occur? I'm putting this car together for my mom for Mother's Day and I want it to be in great shape. This is an '86 engine going into an '85 SPG body. Is it possible to put solid mounts in and have it work...ie do the mounts work for any engine or chassis?
