The one bearing that spins twice has a little less grease in the bearing race. This doesn't mean there's isn't any grease in it, just a bit more worn. The one that rotates one turn is probably still thick with grease. If the temperature was cold when you checked them, then the grease was just more solidified. try spinning with both tires on the rear axle. You'll be able to hear the bearing noise at this point if there's any. 160k isn't too much but, replacement will give you piece off mind. My two Volvo's that were sold had over 250K and never had a wheel bearing problem. Saab bearing are complete units and can only be serviced with complete replacement. With the rear bushing replacement, you can remove the by drilling some of the rubber out and then press the rest out. When renewing , liquid soap will help with installation. I have a hydraulic press for this. Other have used a "C" clamp.
