The AMM outputs a voltage that is proportional to the mass of the air flowing through it (hence Air Mass Meter). The adjustment screw changes how many volts you get for a particular airflow. The purpose of adjustment is to adjust out other errors in the fuel injection system. In later cars, there is no adjustment.

The AMM works by passing a current through a heated wire. As air flows over the wire, it cools off. The circuit tries to keep the temperature of the wire constant. So as more air flows, more current is required to keep it hot. As less air flows, less current is required. The screw is adjusting a variable resistor (potentiometer) in the current path.
