What's track record post-overheating?

I wonder what others' experience has been with repairing C900 engines with new head gasket after coolant runs low and engine overheats.
I let this occur on my '96 9000 CS, with a similar motor. And the 9000 bulletin board is less active with fewer searchable examples and fewer DIY owners so I thought I'd ask here.
I wonder how well motors have come back. Does overheating take the temper out of the piston rings and ruin compression?
Mine didn't get what I'd call stinking hot, no smell off the engine, no burning oil or paint. I'd driven it about a half hour and say 65 mph, and when I finally noticed the heat gauge pinned at the top, stopped, let it cool down and added water - - it took it, spit some up, then settled down and cooled and i put in a total of about 2 gallons. Then it wouldn't restart.
This morning I went back, pulled the plugs, cranked it and it spewed water out of some of the plug holes, installed new plugs and it managed to start. I drove it about 10 miles, gauge began rising, stopped to add water and it restarted only after about 2 minutes of sustained cranking, drove another 7 miles and shut it off and called for a tow home.
