what kind of race exhaust system is good....

I going ahead with my Race built engine through SPG9, and I want to ditch the muffler for open pipes. I have a couple questions. how much louder is it really going to be? I've run the car with out a muffler before and it seemed a little more raspy ( which I like ), If go with a 3" down pipe and ditch the cat too, and then 2.5" pipe from there back and have it exit in front of the left rear tire, will I still have enough exhaust system to give back pressure and also have it flame out on shifts?or should I go with a 2 1/4" pipe to give a little more pressure do to the absence of the other exhaust components.Oh yah this is a street car and I don't care about local emission laws, since I've got a crooked smog shop to go to.
has any one else run open pipes? what do you think?how loud is it really?

ps. I currently have a two chamber flowmaster, which has a nice tone, but frankly its too dam quiet.
