Ok, I'll start with the front speakers. I have little direct experience with Kenwood coaxials, but what I do have is favorable. If it were down to Kenwood or Polk though, I'd take the Polk in a second. You might look at Blaupunkt as a third option, however. They are just as good (if not better) than the Kenwoods, and much cheaper. For coaxial speakers, the crossover is built in, so you have nothing to add or solder in. Component speakers typically are the ones with separate crossovers, but these are typically not solder in jobs, either, just screw on the wires to to box.
For the rears, again, if they are coaxials/triaxials already, you don't need to add additional crossovers to them.

As for amps, there are quite a few which can fit under a front seat. Are you looking just to power the rears, and run the fronts off the deck? I personally would suggest going the other way around, unless you have bass blockers (essentially a high value inline capacitor) for your fronts. This would probably give you less bass than the method you suggest, but much cleaner sound, as long as you get an amp with a built in high pass crossover, and it's hard to do otherwise these days... Of course the ideal option would be a four channel amp, to power both front and rear, but that means one more RCA cable to run from your head unit, unless you can live without a fader. That said, you can power both front AND rear speakers off a two channel amp, so long as it's stable into 2 ohms (most are in stereo), but again, lose the fader ability.
I think the Blaupunkt 2 channel amps are a hard value to beat, from the aforementioned site. You can get a great little 2 channel for $100, or a four channel for $150, both less than half of retail. I like Kenwood amps too, never had a bad one. Amps I would stay away from include Pioneer and Sony.
