I find that if the work does not require unloading and/or removing either/both wheels, then the ramps are better because they are easier to use and it usually provides more clearance than using jack stands (unless you jack the car WAY up).
Also, in my opinion, ramps are far SAFER then jack stands because the car is still resting on both wheels and it would be impossible for the car to "fall off" the ramps once it is on them. Perhaps the car could roll backwards off the ramps, but only an idiot wouldn't securely "chock" the rear wheels and you also have the emergency brake and putting the car in gear as two added retainers. It would be quite difficult to push the car off the ramps even with the car in neutral without the e-brake and without chocks.
I probably have the same ramps that Quasi has - they are some kind of composite/plastic material and are rated to something like 6 tons each (!!). So I'm not really worried about my 1 ton front end overloading them.
I only use jack stands when I have to, although I agree with Quasi that they are quite safe as long as you position them correctly.
