Frankly, I haven't found heater hoses to be problematic, but it wouldn't hurt to carry two at only $9 each. If you keep the car for years you'll eventually need them anyway.
The best tool/part to carry with you at all times is a cell phone.
The items I have found most prone to leave you mercilessly stranded are likely too complex to fix easily on the side of the road. These include thermostat, serpentine belt, and harmonic-balancer. The latter broke once leaving me stranded 300 miles from home and 175 from a Saab dealer in my '91 9K (sold in '99). No one had the correct part for this car in this small town in FL, of course, and it had to be towed to a Saab dealer in Mobil, AL.
A decent array of tools is paramount, though I confess I don't do this as effectively as I should. A tire repair kit is nice if you don't like riding on that ridiculous space-saver spare tire, starting with a plug kit and small 12V electric or foot air pump.
